This is a FABULOUS Gluten free recipe!

Serves 8
Gluten free & vegan

3 tbsp Agar powder
1½ – 2 cups Organic Blueberries
1 tbsp Coconut palm sugar
2 14 ounce can Coconut milk light
1/2 cup Agave nectar, Organic maple syrup or Raw unprocessed honey
1 cup Lecithin granules
Juice and zest of one lime
Directions:
Place the Organic blueberries, 2 tablespoons of the Agar powder as well as the Coconut palm sugar in a small sauce pan over a low heat and let simmer for a few minutes, till Agar powder dissolves. Puree in blender for a quick 30 seconds to dissolve the blueberries a bit. Line a spring form tin with plastic wrap and pour mixture in. Put it in the fridge to set, approximately 20 minutes.
In a clean sauce pan pUT 1/2 cup light coconut milk and the last tablespoon of the Agar powder. Let simmer for a couple minutes until the agar dissolves. Allow to cool a little bit, then place in a blender with the rest of the ingredients (coconut milk, agave, lecithin & lime zest and juice). Blend until smooth then pour on top of the set coulis (blueberry mix). Refrigerate over night or at least a few hours to set. Top with some blueberries and shaved coconut and serve.
