Cuban style black beans

Black beans are such a versatile and healthy addition to your diet! They can help your digestive tract, blood sugar regulation, cardiovascular health, cancer prevention, nervous system health, and they are DELICIOUS! This recipe is a great way to celebrate black beans. Serve with Spanish Wild Rice, and you have a fiber and protein dense supermeal!!

Serves: 6-8

 

Ingreients:

2 tbsp olive oil
1 large onion, chopped
1 large red bell pepper, cut into 1/2-inch pieces
6 large garlic cloves, chopped
1 tbsp dried oregano
1 tbsp Cumin
3 15oz cans organic black beans, rinsed, drained
3/4 cup beer (or broth, but beer is better)
1 1/2 tbsp apple cider vinegar
4 shakes of hot sauce
1 tspn brown sugar or organic maple syrup
1/2 cup cilantro (for garnish)
Lime wedges

Directions:

Heat oil in a large saucepan over medium heat. Combine bell pepper, onion, garlic, cumin and oregano and sauté until vegetables begin to soften, about 5 minutes. Add 1 cup of the black beans to saucepan. Using the back of a fork, mash beans coarsely. Add remaining beans, hot sauce, beer (or broth) and vinegar and simmer until mixture thickens and flavors blend, stirring occasionally, about 15 minutes. Mix in brown sugar in the last few minutes. Season beans to taste with cilantro, salt and pepper and serve with a lime wedge.
