This is an incredibly easy and fantastic Vegan pizza recipe. So many other variations you could do with this basic recipe to make it amazing!
1 wholegrain pita
2 tbsp Pesto (see pesto recipe below)
10 spinach leaves
1 scallion sliced
4 mushrooms (any kind), sliced
1 garlic clove, thinly sliced
4 grape tomatoes, sliced in half
Pinch of sea salt
Pinch of red pepper flakes
3 basil leaves chopped
Heat oven 375 degrees F (or you can put in toaster oven)
Place pita on an oven safe pan.
Spread pesto over entire pita.
Put spinach, scallion, mushrooms, garlic and tomatoes on pita
Sprinkle with sea salt and red pepper flakes
Bake for 7-10 minutes, garnish with basil and enjoy!

Protein: Vegan Sausage, Black Beans
Veggies: Sundried tomatoes, Red Onions, Olives, Artichoke hearts, Asparagus
Herbs & Sauces: Cilantro, Fresh tomato and basil sauce, Olive oil and garlic spread
Homemade pesto: 1 cup raw sunflower seeds and almonds combined, 1/2 cup olive or sunflower oil, 2 cloves garlic, juice of one lemon, lots of basil, sea salt. I add water to make more and make it smoother, but you can also get a really dark green, chunkier pesto dip without water and run it through a food processor.
