Crisp, fresh and overwhelmingly refreshing and healthy. This is a fabulous salad for anytime of the year, but especially during winter months, when honeydew is at its best.

Serves 4
Ingredients:
5 stalks of kale, remove large stock and slice leaves thin, like ribbons
1 Lemon, juiced
1 Honeydew melon, peeled, seeded and finely chopped
1/3 cup sliced almonds
1/3 cup shaved Romano cheese
1 tablespoon organic maple syrup
Dash of sea salt
Cracked black pepper to taste
1 tablespoons coconut oil, melted
Directions:

Place Kale into a large mixing bowl. Keep honeydew to the side.
To make the dressing, combine lemon juice, coconut oil, maple syrup, salt and pepper in a small bowl, mix well. Toss well with kale.
Add the melon, almonds, and cheese. Toss well.
Refrigerate for 10-15 minutes before serving, so the flavors can have a chance to mingle.
Toss again before serving, garnish with a little more cheese and freshly ground black pepper.
