I could live off of this salad! The flavors work so well together, and every bite is heaven. Packed full of everything your body needs, fiber, protein, healthy fats and carbs, this is the perfect meal!

Ingredients:
1 cup Organic Power Greens (Kale, Spinach Chard)*
1 cup Organic Spinach*
1/4 of Organic bell pepper (red, orange or yellow)*
1/4 cup Organic cherry or grape tomatoes, halved
1/4 of one Organic cucumber, cut into quarters*
2 large Organic Radishes, sliced
1/2 Organic Peach or 4 organic strawberries, sliced*
1/4 Avocado, diced (optional)
1 oz Fresh Goat cheese (plain or any flavor you like), crumbled
3 oz Chicken, smoked tofu or salmon (optional), diced
1 tbsp Pepitas (raw, unsalted pumpkin seeds)
1 tbsp Organic Apple Cider Vinegar
1 tsp Organic Extra Virgin Coconut Oil
1 tbsp Salad Booster (Living Intentions: Sprouts market carries it)
*These ingredients are on the 2012 list of vegetables to buy Organic, due to frequent contamination and pesticide residue.
Directions:
Wash, chop, sprinkle and combine all ingredients and enjoy! YUM!
