Pineapple Salsa

This is an exceptionally flavorful salsa made of fresh cilantro and sweet pineapple. It’s delicious when smothered over grilled meats and vegetables. It is only 15 calories and can be prepared in only 15 minutes, win win!

Serves: 16

Ingredients:

1 lb. chopped tomatoes
2 cups chopped pineapple
1/2 cup chopped red onion
1/4 cup chopped red bell pepper
1 Anaheim chile, roasted, seeds, stem, and veins removed, chopped OR 1 fresh serrano chile, seeds and stem removed, chopped*
1 tbsp. lemon or lime juice
1/4 cup chopped fresh cilantro, packed
1/2 tsp. salt
1/8 tsp. ground black pepper, course

* Be careful when handling hot chile peppers. Be sure to wash your hands thoroughly with soap and hot water after handling them and avoid touching your eyes.

Directions:

1. Combine all of the ingredients in a medium sized bowl.
2. Cover, then refrigerate one hour minimum to blend all the flavors. It will keep up to eight hours in refrigeration. If chilled more than one hour, be certain to drain the juices.
