This savory dip is made with a base of red peppers and walnuts. In the Middle East it’s a popular snack called “muhammara”. It has a an exceptional taste and texture, and is very healthy for you. Try this as a novel delightful change from the usual dip. It only takes 15 minutes to prepare.

Ingredients:
One 15 oz. size jar of roasted red peppers, rinsed, drained, and chopped
1/3 cup of walnuts, toasted and chopped
1/4 cup of chopped flat-leaf parsley leaves, plus more for garnish
Two tablespoons of olive oil
One tablespoon of lemon juice
One tsp finely grated lemon zest
One-fourth teaspoon kosher salt
Half tsp honey
Half tsp ground cumin
Half tsp freshly ground black pepper
Half tsp chile flakes
Jicama, cucumber or wholegrain pita bread slices
Directions:
1. Pulse entire ingredients but the jicama in your blender until it’s a smooth texture.
2. Sprinkle on top with the remainder of the chopped parsley. Then serve with veggies or pita.
This delicious recipe is for 1 ½ cups, and will be a treat of sixteen servings.
You can make this ahead and keep it for one day if chilled and covered.
