With green and red tomatoes in the fresh green tomato salsa, you have a delightful combination of tart and sweet taste.
Half pound of roasted and chopped green tomatillos
Half pound of ripe, chopped red tomatoes
One cup of fresh yellow whole corn kernels (optional: adds sweetness and texture)
3 ounces fire roasted jalenpenos
¼ cup fresh onion, chopped
1/4 cup of fresh cut chives
2 tbsp lemon juice
Half tsp salt
1/8 tsp coarse ground black pepper
Handful of cilantro
1. Combine all ingredients into your food processor, or blend by hand.
2. Cover the mixture and chill for one to eight hours.
3. Drain the fresh green tomato salsa before serving if you choose to refrigerate it more than one hour.
