This wild rice is perfectly spiced up with Spanish flair! Full of nutrients and flavors, this vegan dish is sure to excite your taste buds!
1 tsp Olive or Grapeseed Oil
½ whole Yellow or White Onion, Chopped
1 whole Green or Red Pepper, Seeded And Chopped
1 cup Wild Rice Medley
2 cups Vegetable Broth (I love the Hearty Veg broth at Trader Joes)
14 oz, Organic Diced Tomatoes, canned
1 tsp Cumin Powder
1 tsp Chili Powder or Chipotle Ancho Powder
1 tsp Dried Oregano
½ tsp Sea Salt
½ tsp Paprika
½ tsp Garlic Powder
¼ tsp Cayenne Pepper
1/4 cup cilantro (optional)
In a large saucepan, heat oil over medium heat. Combine chopped onion and green pepper and saute until fragrant, just a few minutes. Add all remaining ingredients (except cilantro) and bring to a boil.Reduce heat, cover and simmer for 30-40 minutes. Remove from heat and allow to sit for 5 minutes. Fluff with a fork and serve!
