
This is a delicious and healthy recipe! Very easy to make and will definitely be a hit with your family, it was with mine!
Serves: 4
Ingredients:
1 cup brown or wild rice (use vegetable broth instead of plain water for added flavor)
2 tbsp EVOO (Extra Virgin Olive Oil)
20 medium shrimp, peeled and cleaned
1 yellow onion, thinly sliced
5 cloves garlic, sliced
1 long red chili pepper, sliced
2 cups broccoli, cut into small florets
15 green beans, chopped into 1″ pieces
10 mushrooms, sliced (any kind is fine)
Marinade:
1 tbsp minced garlic
1 tbsp extra virgin olive oil
3 tbsp minced fresh parsley
dash of sea salt
dash of fresh ground pepper
Directions:
Mix all marinade ingredients in a bowl, and add shrimp, let marinade for a minimum of 30 minutes. You can marinade shrimp overnight if you wish.
Cook rice as package indicates.
In a small saucepan, blanch broccoli in two cups of water and set aside (approx 5 minutes)
In a large wok or frying pan, saute the onion and red pepper in EVOO for a few minutes, then add the garlic. Cook until onion is tender. Add mushrooms, green beans, and marinaded shrimp, saute until shrimp is pink about 5 minutes. Add in blanched broccoli and toss for a minute, until all ingredients are well combined. Add fresh ground pepper and a pinch of sea salt to taste. Serve over rice and enjoy!
