With extra melon you can puree’ and freeze it in an ice cube tray, then have it for smoothies and summer drinks later. You can also use it in ice cubes for club soda. The Summer Melon Fizz takes only a few minutes to prepare. Freeze for two hours, and then it’s ready to serve four people. This will be ideal on those hot summer days.

Ingredients:
Two cups pureed, strained ripe melon of any type.
One liter club soda
fresh mint for garnish
Directions:
Pour melon puree into clean ice cube trays. Freeze until set. It usually takes a couple hours. This will serve four people.
