Sweet Onion and Thyme dip

Sweet onion and thyme dip is not only delicious, but incredibly nutritious and low calorie as well. Onions contain a compound known to fight cancer and Greek yogurt is rich with protein, low in fat and fantastic for your digestive system. Great to dip veggies in, put on your favorite sandwich or serve with some baked wholegrain pita chips.

Serves: 11

Ingredients:

¾ teaspoon kosher salt
¼ teaspoon pepper
One tsp of olive oil or grapeseed oil
Two tsp chopped thyme leaves with thyme sprigs
1 ½ cups plain low-fat Greek yogurt
12 oz. of finely chopped Maui onion

Directions:

Place the onion in a large frying pan with oil set at medium heat. Stir until golden brown for about 10-12 minutes. Add chopped thyme, salt and pepper, cooking the onion with these spices for a minute. Allow it all to cool, stir in yogurt and then chill for a half hour. Top it all with thyme sprigs. Serve with chips or veggies.

The Sweet Onion and Thyme Dip can be made to keep for four days if chilled. The nutritional information is with three tablespoons per serving.
