These black bean tacos are awesome and healthy to boot, yielding less than 300 calories per serving and packing a ton of protein! Simple, delicious and healthy… three of my favorite words.

Serves: 6
Ingredients:
2 tsp olive oil
¾ cup of chopped onion
One jalapeno pepper, chopped and with seeds removed
One tbsp dry sherry
One tbsp low-sodium soy sauce
One 15 oz can of organic black beans, drained and rinsed(fresh is preferred)
One package smoked or baked tofu, chopped
Half tsp black pepper
12- 6” Whole wheat tortillas, fresh corn or Ezekiel wraps
Two cups of shredded romaine lettuce
1/2 cup scallions, chopped
1 Ripe avocado chopped
Handful cilantro, chopped
1 lime, cut into 6 wedges
Salsa Fresca
Directions:
1. Set oven to medium heat, then heat the olive oil in a non-stick skillet. Stir in the garlic, jalapeno, onion and oregano. Cook the mixture for about ten minutes while stirring often. Stir in sherry, soy sauce, beans, and tofu, bring to a boil. Cook about 7 minutes or until liquid almost evaporates. Sprinkle with black pepper.
2. Heat up the tortillas, either in a pan or in the oven. Add about a third cup of the bean mixture into each torilla. Top with 2 thin slices of avocado, some cilantro, romaine, scallions, salsa, and a lime wedge.
