Vegan Spaghetti and “Meatballs”

Simple and delicious vegan dish by the lovely Maria Sirriya of Hip Hop Tantra Yoga that will fill you up and leave you smiling like a happy Buddha! The ingredients have so much flavor, especially the “meatballs!” Your taste buds will love the refreshing feeling of just a few ingredients, and your body will be thankful for the protein and minerals the quinoa spaghetti and whole grain vegetarian burger mix. Enjoy!

 

Serves: 4

Ingredients:

4 Large Tomatoes, diced (organic)
2 cloves of garlic, diced
1 cup of fresh Basil, chopped (organic) or 2 tbsp of Dried Basil
1 tsp Cardamom Seeds or 4 Cardamom Pods
1 box of Nature’s Burger Vegetarian Whole Grain Mix
1 box of Quinoa Spaghetti (organic and gluten free)
3 tbsp Olive oil
Salt and Pepper

Directions:

Start heating 4 quarts of boiling water with 1 tablespoon of olive oil in a large pot for the Quinoa Spaghetti, which cooks in about 7 minutes.

Prepare the Nature Burger Mix by combing the box contents with boiling water into a bowl (follow package instructions) and let sit for 15 minutes.

Heat one tablespoon of olive oil and add the diced tomatoes and garlic in a large skillet. Bring to boil for 7 minutes, stirring occasionally. Lower the heat to medium, add basil, cardamom seeds, salt and pepper, and simmer for about 7 more until the juices thicken.

Add the spaghetti into the boiling water and cook according to package instructions.

Create 1 tablespoon size meatballs out of the burger mix and heat throughly on a skillet according to package instructions.

Mix all the ingredients together, find a quiet inner space and enjoy!
